Nonna Emilia's pasta is made with semola di grano duro (durum wheat semolina) sourced from local farms in Emilia-Romagna. She uses a bronze die to shape the pasta, giving it a rough texture that helps sauces cling beautifully. Her signature dish is tortellini in brodo, a classic Bolognese soup featuring delicate, meat-filled pasta in a rich broth.
